Η συνταγή και στα ελληνικά στο τέλος της ανάρτησης!

This post was supposed to go live last week, but I faced some serious problems with the stability of the white cream and thus I postponed it for today. At this point, I would like to share with you what happens at the backstage of this site, that being my kitchen and the way I prepare each post.

During the week, I try to decide on the theme of the post I am going to publish. The first thing I try to decide is whether it is going to be a sweet or savory dish. After I make my decision, I start thinking what this dish is going to be like. Sometimes, I have an inspiration and the food appears in my mind. I don’t hear voices or anything; I am just fantasizing the meal or dessert I would like to present to you. Once I decide the food, I am trying to think also the story behind it. Sometimes it is very easy, either because the specific food has a story on its own or it comes from a place rich in history or somehow it is connected to an important part of my country’s culture.

Other times though it is a bit more difficult to find a connection and I am just relying on circumstances to help me find the right story. So far, this tactic hasn’t failed me. Either while I cook or because of something my son tells me or something in the preparation of the food helps me decide on the theme of my story.

Friday afternoon after work I go to the grocery store to buy all the stuff I need for two proportions of the specific dish I have decided to make.

On Saturday morning I start preparing the dish. While I cook I have a notebook, a pen and a camera next to me. Every ingredient I use, I write it down and I always take pictures during the procedure. When the meal is ready I take pictures of the final result and then we sit down as a family and eat it and grade it.

If what I have prepared is above average, then it passes the first phase of approval. If it is not good, but has plenty of space for improvement, I take notes. If it is garbageworthy, it goes to the bin without second thoughts.

In the cases one and two, I proceed to the second phase. If the dish was really good, I make it again on Sunday to make sure the ingredients and measurements are ok and the food still tastes great. If the specific meal passes this phase too, then it is ready to be published.

In case it needs improvements, I make it again on Sunday with the changes I think that will help and we try it again. If it has become what I hope it would, then it is ready to be published. If not, then it goes to the bin in a blink of the eye. I always have couple of recipes ready to be published in case I face total failures during the weekend.

On Sunday afternoon I sit and write the post along with the recipe and arrange the photos. On Monday morning, while at work, I just take a quick look at it and publish it.

So, this is pretty much how I work. Of course there are recipes that are easy to follow and they do not need precision in the ingredients, in the sense that adding a bit more or less of an ingredient it won’t change the texture or the taste of the dish. In this case, I do not test the dish next day, because even if someone adds a bit more oregano or parsley or mustard it won’t make any difference.

What happened in this case was that while I had absolutely no problem with the chocolate mousse, I found real hard time with the white pastry cream. I wanted a stiff cream, so I could fill the chocolate cups and make picks. The cream was coming out runny so I had to schedule the experiment for the coming weekend. After testing, I came up with these analogies and I think it was stiff enough to make the picks.

These cupcakes were so good and, my failures excluded, so easy to make you cannot believe. Also, you can make the cups even two days before and the creams one day before and the same day just assemble everything. They are very elegant and rich in flavors.

Black and White Chocolate Cups

Ingredients/ Συστατικά
For Six Chocolate Cups
  • 250 gr. semi-sweet chocolate 55% to 60% cocoa
Chocolate Mousse for Six Cups
  • 100 gr. / 3.5 oz. dark chocolate 60% cocoa
  • 60 gr. / 2 oz. milk
  • 100 ml 3.5 fl oz. heavy cream 35% fat
  • 1 tsp confectioner’s sugar
Orange Pastry Cream for Six Cups
  • 340 ml / 12 fl oz. milk
  • 100 gr. / 4 oz. confectioner’s sugar
  • 4 egg yolks
  • 30 gr. / 1 oz. all-purpose flour
  • ½ tsp orange extract
  • Confetti for decoration
Instructions/ Εκτέλεση
For the Chocolate Cups
  1. Two days before you can make the chocolate cups.
  2. Take 6 silicon muffin cups, the small size.
  3. Put the chocolate in a glass bowl and melt it in the microwave.
  4. Let the chocolate arrive at 40° C / 104° F.
  5. Take one silicon cup and pour 2 tbsp of the melted chocolate.
  6. Turn the cup around so that the chocolate covers the sides of it.
  7. Turn it upside down over the bowl of chocolate to pour the excess chocolate.
  8. Place it in the fridge.
  9. Follow the same procedure with the rest of the cups.
For the Chocolate Mousse
  1. Boil the milk.
  2. In a glass bowl place the chocolate cut in small pieces and pour the hot milk.
  3. Incorporate and put aside.
  4. In your mixer bowl pour the heavy cream and confectioner’s sugar and whisk with the wire whip until it becomes thick as a Greek yogurt.
  5. Slowly, slowly add it to the chocolate batter and incorporate.
  6. If you will use it immediately put it in the freezer for half an hour to 1 hour.
  7. If you are going to use it the next day put it in the fridge.
For the Orange Pastry Cream
  1. Place a pot in medium heat and add the milk.
  2. In a glass bowl put the yolks, the flour and the sugar and whisk until they are incorporated.
  3. A moment before the milk starts to bubble, remove from fire and start pouring it in the yolk/flour batter in a steady, slow steam while whisking at the same time.
  4. Return the batter to the pot and fire.
  5. Start whisking until the cream begins to thicken.
  6. When it has become like custard remove from fire and add the orange extract.
  7. Pass it through a sieve onto a glass bowl.
  8. Cover with cling film and let it cool.
  9. Put in the fridge until the day you will need it.
Assembly
  1. Take the two creams out of the fridge and whisk each one with the wire wipe to make fluffy.
  2. Pour the chocolate and orange creams in two separate piping bags or if you don’t have that in freezer plastic bags.
  3. If you use freezer bags with a scissors, cut the one tip of the bag and start piping onto the chocolate cup until you make a pic.
  4. Do the same with the rest of the cups.
  5. Throw some confetti to add color.

Σοκολατένιες Φωλιές με Κρέμα Σοκολάτα και Πορτοκάλι

Ingredients/ Συστατικά
Για Έξι Σοκολατένιες Φωλιές
  • 250 γρ. σοκολάτα κουβερτούρα 55% έως 60% κακάο
Μους Σοκολάτας για Έξι Φωλιές
  • 100 γρ. σοκολάτα 60% κακάο
  • 60 γρ. γάλα
  • 100 ml κρέμα γάλακτος 35% λιπαρά
  • 1 κ.γ. ζάχαρη άχνη
Κρέμα Πορτοκάλι για Έξι Φωλιές
  • 340 ml γάλα
  • 100 γρ. ζάχαρη άχνη
  • 4 κρόκους αυγών
  • 30 γρ. αλεύρι
  • ½ κ.γ. εκχύλισμα πορτοκαλιού
  • Πολύχρωμη τρούφα για διακόσμηση
Instructions/ Εκτέλεση
Για τις Σοκολατένιες Φωλιές
  1. Δύο ημέρες πριν μπορείτε να φτιάξετε τα κύπελλα.
  2. Πάρτε 6 θήκες σιλικόνης για muffin, το μικρό μέγεθος.
  3. Βάλτε τη σοκολάτα σε ένα γυάλινο μπολ να λιώσει στο φούρνο μικροκυμάτων.
  4. Αφήστε τη σοκολάτα να φθάσει στους 40° C.
  5. Πάρτε μία θήκη σιλικόνης και ρίξτε 2 κουταλιές της σούπας λιωμένη σοκολάτα.
  6. Γυρίστε το κύπελλο γύρω γύρω, έτσι ώστε η σοκολάτα καλύψει τα τοιχώματα.
  7. Γυρίστε το ανάποδα πάνω από το μπολ της σοκολάτας να φύγει το πλεόνασμα σοκολάτας.
  8. Τοποθετήστε το στο ψυγείο.
  9. Ακολουθήστε την ίδια διαδικασία με τα υπόλοιπα.
Για τη Μους Σοκολάτας
  1. Βράστε το γάλα.
  2. Σε ένα γυάλινο μπολ τοποθετήστε τη σοκολάτα κομμένη σε κομματάκια και ρίξτε το ζεστό γάλα.
  3. Ενσωματώστε και βάλτε στην άκρη.
  4. Στο μπολ του μίξερ σας ρίξτε την κρέμα γάλακτος και τη ζάχαρη άχνη και χτυπήστε με το σύρμα μέχρι να πήξει σαν γιαούρτι.
  5. Σιγά-σιγά, προσθέστε το στο μίγμα σοκολάτας και να ενσωματώστε.
  6. Αν θα το χρησιμοποιήσετε αμέσως βάλτε το στην κατάψυξη για μισή ώρα με 1 ώρα.
  7. Αν σκοπεύετε να το χρησιμοποιήσετε την επόμενη μέρα βάλτε το στο ψυγείο.
Για την Κρέμα Πορτοκάλι
  1. Ζεσταίνουμε μια κατσαρόλα σε μέτρια φωτιά και προσθέστε το γάλα.
  2. Σε ένα ποτήρι μπολ βάλτε τους κρόκους, το αλεύρι και τη ζάχαρη και χτυπήστε ελαφρά έως ότου ενωθούν.
  3. Λίγο πριν το γάλα αρχίζει να φουσκώνει, αφαιρέστε από την φωτιά και αρχίστε να το ρίχνετε στο μίγμα αργά και σταθερά, ανακατεύοντας ταυτόχρονα.
  4. Επιστρέψτε το μίγμα στην κατσαρόλα και στη φωτιά.
  5. Αρχίσει να ανακατεύετε μέχρι η κρέμα να αρχίσει να δένει.
  6. Όταν δέσει αφαιρέστε από τη φωτιά και προσθέστε το εκχύλισμα από πορτοκάλι.
  7. Περάστε τη μέσα από ένα κόσκινο μέσα σε ένα γυάλινο μπολ.
  8. Σκεπάστε με μεμβράνη και αφήστε τη να κρυώσει.
  9. Βάλτε στο ψυγείο μέχρι την ημέρα που θα τη χρειαστείτε.
  10. Συναρμολόγηση
  11. Βγάλτε τις δύο κρέμες από το ψυγείο και ανακατέψτε την κάθε μία με το σύρμα για να γίνουν αφράτες.
  12. Βάλτε τις κρέμες σοκολάτας και πορτοκαλιού σε δύο χωριστά κορνέ ή αν δεν έχετε σε δύο πλαστικές σακούλες διατήρησης τροφίμων.
  13. Εάν χρησιμοποιείτε πλαστικές σακούλες με ένα ψαλίδι, κόψτε το ένα άκρο και αρχίστε να βάζετε την κρέμα μέσα στο σοκολατένο κύπελλο δημιουργώντας μία κορυφή.
  14. Κάντε το ίδιο με τα υπόλοιπα.
  15. Διακοσμήστε με πολύχρωμη τρούφα για να προσθέσετε χρώμα.
