I am sure you all have heard about Aesop’s Fables. Aesop was an ancient fable maker and writer. He is considered to be the founder of a specific type of literature called allegory (symbolism). It is worth noticing that not even one of his fables was written, but they were getting around from mouth to mouth.

He was born in 7th century B.C and it is not known the exact location of his birth. He was presented as a very ugly person who was born by slaves, but with high intelligence and skills in speech. Even though he was a slave all his life, the Athenians made a statue of him to show that no matter what one’s origin or job is, his/her worth must be acknowledged and cherished.

In his fables Aesop used animals talking and acting as humans. They are small and very concise. All of them convey a message, a moral that can be easily understood even by children. His stories were very educative on one hand, but on the other hand they were that funny and intriguing that caught everyone’s attention up to the last moment. Through his fables he condemned violence, cheat, vanity, betrayal, arrogance, greediness and cunning. People were surrounding him to hear his stories.

The first publishing of Aesop’s fables was in 1479 A.C. in Venice by Damiano di Santa Maria. It is estimated that the fables have been read by a number of people worldwide, as large as that of the Bible.

Today I am going to tell you the story of the peasant and the hen. So, once upon a time there was a peasant who had a hen. He was poor and gods, in order to help him survive, gave his hen the ability to lay one golden egg per day. The peasant couldn’t believe his fortune. His life was completely changed and improved. He became wealthy and he wasn’t starving anymore. But then he started to be thinking that perhaps inside this hen there was a treasure that was sitting there. Why not knacker the hen and get the treasure sooner rather than later? Thus, one night, while the hen was sleeping in the coop, he went and killed the poor hen and opened her belly to find the treasure. Oh, what a great disappointment, there was nothing extraordinary inside the animal’s belly. Everything was the same as in the other poultry. No treasure, no gold and no eggs. He immediately realized what he has done. Not only did he not find any gold, but he lost the one and only source of his wealth, the hen. His greediness blurred his judgment and made a mistake that cost him eventually his life, since he starved to death.

As I was preparing this Chicken Souvlaki, I remembered this fable and had the chance to talk about it over lunch with my son. I marinated this chicken for 5 hours, but you can do it overnight as well. Also, if you don’t feel like using skewers you can make it in a nonstick skillet or in the broiler, either in small pieces or as a fillet. It was extremely juicy and delicious and the herbs gave it a very unique flavor. I accompanied it with these Citrus Greek Potatoes. I know many of you love the lemony style ones, but if you feel adventurous enough, do try this version with orange juice. It gives a delicious sweet flavor to them.

Chicken Souvlaki in Olive Oil & Vinegar Marinade

For 10 large skewers
  • 1.400 gr / 3 lb. chicken breast skinless, boneless
  • 10 tomatillos
  • 1 green pepper, cut in 3cm. X 3cm. / 1in. X 1in.
  • 1 red pepper, cut in 3cm. X 3cm. / 1in. X 1in.
For the Marinade
  • ½ cup olive oil
  • ¼ cup white wine vinegar
  • 2 tbsp Dijon mustard or any other mustard
  • 2 tbsp honey
  • Salt and pepper
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp onion powder, you can use real onion chopped if you like
  • 1 tsp garlic powder, same stands for garlic too
  • ¼ tsp ground ginger
  • ¼ tsp ground cardamom
  • ¼ tsp dried thyme
Instructions/ Εκτέλεση
  1. In a non-reactive bowl mix all the marinade ingredients.
  2. Cut the chicken is squared pieces about 4 cm X 4 cm / 1.5 in X 1.5 in.
  3. Add the chicken to the marinade and cover all pieces.
  4. Put a plastic wrap and cover the bowl.
  5. Place in the fridge for at least five hours up to overnight.
  6. If you don’t have stainless steel skewers you can use the classic wooden ones.
  7. Place the wooden skewers in cold water for about 15 minutes before using them.
  8. To make the 10 skewers you have to put 4 chicken pieces, 1 tomatillo and 2 pieces of peppers per skewers interchangeably.
  9. I have a special rotisserie machine that makes them in 20 to 25 minutes.
  10. You can either BBQ them or put them under the broiler.
  11. Time depends on the fire for the BBQ and on the particular oven you have.
  12. For the broiler I would go for 225°C / 435° F for about 15 minutes per side or until juices come out clear, no blood.
  13. For the BBQ, well, that depends highly on the fire so I am not going to guesstimate here.

Citrus Greek Potatoes

Ingredients/ Συστατικά
  • 8 medium potatoes cut in four lengthwise
  • 1 cup olive oil
  • 1 cup orange juice
  • 1 tbsp honey
  • 1 onion, sliced
  • 2 garlic cloves, cut in two
  • 1 tsp dried basil
  • 2 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper
  • 2 tbsp orange marmalade
Instructions/ Εκτέλεση
  1. Preheat oven to 225° C / 435° F.
  2. In a pyrex or pan scatter the garlic pieces and above them the potatoes.
  3. Add the onion slices.
  4. Salt and pepper them.
  5. In a glass bowl mix the oil, orange juice, honey, basil, oregano, thyme and paprika and mix to incorporate.
  6. Pour the batter on the potatoes, scatter the marmalade and place the pyrex or pan in the oven.
  7. Bake for about 1 ½ hour.
  8. Remove, let them rest for 5 minutes and serve.

Κοτόπουλο Σουβλάκι με Μαρινάδα Μεσογειακή

Ingredients/ Συστατικά
Για 10 Σουβλάκια
  • 1.400 γρ. κοτόπουλο στήθος χωρίς πέτσα, χωρίς κόκαλα
  • 10 τοματάκια
  • 1 πράσινη πιπεριά, κομμένη σε 3 cm. X 3 cm.
  • 1 κόκκινη πιπεριά, κομμένο σε 3 cm. X 3 cm.
Για τη Μαρινάδα
  • ½ φλιτζάνι ελαιόλαδο
  • ¼ φλιτζανιού λευκό ξίδι από κρασί
  • 2 κ.σ. μουστάρδα Ντιζόν ή οποιαδήποτε άλλη μουστάρδα
  • 2 κ.σ. μέλι
  • Αλάτι και πιπέρι
  • 1 κ.γ. ρίγανη
  • 1 κ.γ. βασιλικό
  • 1 κ.γ. κρεμμύδι σε σκόνη, μπορείτε να χρησιμοποιήσετε κανονικό κρεμμύδι ψιλοκομμένο, αν σας αρέσει
  • 1 κ.γ. σκόνη σκόρδου, το ίδιο ισχύει και για το σκόρδο επίσης
  • ¼ κ.γ. τζίντζερ
  • ¼ κ.γ. κΚάρδαμο
  • ¼ κ.γ. ξερό θυμάρι
Instructions/ Εκτέλεση
  1. Σε ένα γυάλινο μπολ ανακατέψτε όλα τα υλικά της μαρινάδας.
  2. Κόψτε το κοτόπουλο σε κομμάτια περίπου 4 cm X 4 cm.
  3. Ρίξτε τη μαρινάδα στο κοτόπουλο και ανακατέψτε να καλυφθούν όλα τα κομμάτια.
  4. Βάλτε μια πλαστική μεμβράνη και καλύψτε το μπολ.
  5. Τοποθετήστε στο ψυγείο για τουλάχιστον πέντε ώρες ή όλη νύχτα.
  6. Εάν δεν έχετε ανοξείδωτα σουβλάκια, μπορείτε να χρησιμοποιήσετε τα κλασσικά ξύλινα.
  7. Τοποθετήστε τα ξύλινα σουβλάκια σε κρύο νερό για περίπου 15 λεπτά πριν από τη χρήση τους.
  8. Για 10 σουβλάκια πρέπει να βάλετε 4 κομμάτια κοτόπουλο, 1 τοματάκι και 2 κομμάτια πιπεριάς ανά σουβλάκι εναλλαξ.
  9. Εγώ έχω μια μηχανή rotisserie που τα ετοιμάζει σε 20 έως 25 λεπτά.
  10. Εσείς μπορείτε είτε να χρησιμοποιήσετε το μπάρμπεκιου ή το γκριλ του φούρνου.
  11. Για το γκριλ θα τα έβαζα στους 225° για περίπου 15 λεπτά από κάθε πλευρά ή μέχρι χυμοί να βγουν καθαροί.
  12. Για το BBQ, εξαρτάται σε μεγάλο βαθμό από τη φωτιά οπότε δεν μπορώ να πω με σιγουριά.

Πατάτες με Πορτοκαλάδα

Ingredients/ Συστατικά
  • 8 μέτριες πατάτες, στα τέσσερα κατά μήκος
  • 1 φλιτζάνι ελαιόλαδο
  • 1 φλιτζάνι πορτοκάλι χυμό
  • 1 κ.σ. μέλι
  • 1 κρεμμύδι, κομμένο σε φέτες
  • 2 σκελίδες σκόρδο, κομμένες στα δύο
  • 1 κ.γ. αποξηραμένο βασιλικό
  • 2 κ.γ. αποξηραμένη ρίγανη
  • ½ κ.γ. αποξηραμένο θυμάρι
  • 1 κ.γ. πάπρικα
  • Αλάτι και πιπέρι
  • 2 κ.γ. μαρμελάδα πορτοκάλι
Instructions/ Εκτέλεση
  1. Προθερμάνετε το φούρνο στους 225° C.
  2. Σε ένα πυρέξ ή ταψί ρίξτε το σκόρδο και από πάνω τις πατάτες.
  3. Προσθέστε τις φέτες κρεμμύδι.
  4. Αλάτι και πιπέρι.
  5. Σε ένα γυάλινο μπολ ανακατέψτε το λάδι, το χυμό πορτοκαλιού, το μέλι, το βασιλικό, τη ρίγανη, το θυμάρι και την πάπρικα.
  6. Ρίξτε το μίγμα στις πατάτες, ρίξτε από πάνω και τη μαρμελάδα και τοποθετήστε το πυρέξ ή το ταψί στο φούρνο.
  7. Ψήστε για περίπου 1 ½ ώρα.
  8. Αφαιρέστε, να ξεκουραστούν για 5 λεπτά και σερβίρετε.
