Η συνταγή και στα ελληνικά στο τέλος της ανάρτησης!
I was knocking my head about what to write in this post. I am sure most of you have heard about what is going on here. It is one of those times you don’t feel like cooking or making anything, because circumstances have vested a dark shadow all over you and you just don’t have the stamina to do whatever you were supposed to do.
It is sad for me to see my country dragged and slandered like this, but on the other hand I feel like much of this is our doing. I could write pages and pages to explain to you whatever has happened to this beautiful country, but I am afraid this will only tire you. I just want to say that from this entire situation people who worked hard and honestly all the previous years will too pay an expensive price; people who paid their taxes down to a penny and were lawful citizens will suffer from the consequences of what is going on. Is it fair? No, it isn’t, but that’s how democracy works and this is something one must keep in mind.
With all these in mind and since I had absolutely no will of making anything this past weekend, I decided to revamp a classic broccoli salad. I wanted something lighter regarding calories and with flavors that have the Greek aroma. I also decided to add strawberries since I love them in salads. This is a perfect light meal for anyone and if you add some chicken or ham, it is right on its own. You can make the sauce one day before and mix it with the vegetables the same day a couple of hours before serving it. Very refreshing, tasty and with less calories than the usual one.
- ½ cup mayo 3% fat
- ½ cup Greek yogurt 2% fat
- 3 tbsp white wine vinegar
- 3 tbsp brown sugar dissolved in 1 tbsp warm water
- Salt, pepper
- 500 gr. broccoli florets
- ¼ cup raisins
- 1 carrot, shredded
- 1 pepper, sliced
- 6 strawberries, cut in small pieces
- 2 tbsp graviera cheese or Parmigiano reggiano
- 1 onion, sliced
- Salt and pepper
- Mix all ingredients in a bowl and put in the fridge for at least two hours or overnight.
- Mix all veggies, fruits, cheese, salt, pepper and raisins in a big bowl.
- Add the sauce and mix to cover all of them.
- Put in the fridge for an hour.
- Serve as it is or with meat.
- ½ φλ. μαγιονέζα 3% λιπαρά
- ½ φλ. γιαούρτι 2% λιπαρά
- 3 κ.σ. άσπρο ξύδι από κρασί
- 3 κ.σ. καστανή ζάχαρη διαλυμένη σε 1 κουταλιά της σούπας ζεστό νερό
- Αλάτι, πιπέρι
- 500 γρ. μπρόκολο
- ¼ φλ. σταφίδες
- 1 καρότο, τριμμένο
- 1 πιπέρι, κομμένο σε φέτες
- 6 φράουλες, κομμένες σε μικρά κομμάτια
- 2 κ.σ. τυρί γραβιέρα
- 1 κρεμμύδι, κομμένο σε φέτες
- Αλάτι και πιπέρι
- Ανακατέψτε όλα τα υλικά σε ένα μπολ και βάλτε τα στο ψυγείο για τουλάχιστον δύο ώρες ή όλη νύχτα.
- Ανακατέψτε όλα τα λαχανικά, τα φρούτα, το τυρί, το αλάτι, το πιπέρι και τις σταφίδες σε ένα μεγάλο μπολ.
- Προσθέστε τη σάλτσα και ανακατέψτε να καλυφθούν όλα.
- Βάλτε στο ψυγείο για μια ώρα.
