Η συνταγή και στα ελληνικά στο τέλος της ανάρτησης!
In Greece our climate is temperate. That means that we experience four stages, spring, summer, fall and winter. All of them are distinct and have their own characteristics which make them unique. Currently, we are in fall and temperatures have changed considerably compared to summer. Days have become smaller and chiller. We have started using cardigans and rains have made their impressive entrance. Temperatures wave between 19°C to 23°C and it is even cooler at nights.
October here is the month of chrysanthemums and gardens around my home are dressed with these beautiful flowers. Schools have well taken their course and all of us are following our winter routine.
October is a very important month for the farmers here, because it is this time of the year that they seed their produce. The rains coming with this month are vital for the success of their plantations and thus they welcome them when they arrive. October is a very important month for the olive gathering too. In the middle of the month farmers start to collect the olives that will give the delicious, nutritional and so good for our health olive oil. The olive oil that is made from October olive crop is by far the best and contains the highest amount of polyphenols. Olives are collected in big plastic baskets and take their way to the olive oil press.
I love this season very much because temperatures are considerably lower than summer’s and nature starts preparing for the winter. It makes me feel a certain melancholy, but somehow I like that. Also, it gives me the chance to change our daily menu and start cooking food that is warm and hearty. In that sense, I made this Broccoli Soup.
Since, we ate a lot of meat that passing week I wanted something filling but meatless. So, I thought I should make a vegetarian soup, one that would have starch to fill our tummies, but also veggies that are major vitamin sources. I decided to do a broccoli soup, because I just love the intense, green color that has. I had sautéed the vegetables before I added the stock, because I believe that this gives a more profound body to the soup.
It was really delicious and if you add some cheese, preferably goat cheese or if you don’t have, just any other cheese you have available in your fridge, then it becomes even more filling and tasty. We all enjoyed it very much, plus it is a very easy and quick meal for weekdays. The whole thing took me no more than 30 minutes from beginning to end.
- 500 gr. / 1 lb broccoli, I used frozen you can use fresh if you like
- 2 carrots
- 1 onion
- 1 garlic clove
- 1 medium potato
- 1.2 lt / 40.5 fl oz. vegetable stock
- Salt, pepper
- Olive oil for sautéing the vegetables and for sprinkling on top of the soup
- 100 gr. / 3.5 oz. goat cheese, grated
- Croutons for topping
- In your multi purpose mini chopper chop the onion, garlic, potato and carrots.
- Defrost the broccoli florets and wash them.
- Take a deep pot and add about 5 tbsp of olive oil.
- Sautee in medium heat the chopped vegetables.
- Pour the stock, salt and pepper.
- Boil for about 10 minutes.
- Add the broccoli and continue to boil for another 10 to 15 minutes.
- Remove from fire and place everything in your blender.
- Very carefully start mashing them.
- Return to the pot and taste to see if it needs more salt and pepper.
- Remove from fire and serve, putting on top the grated cheese and the croutons.
- 500 γρ. μπρόκολο, χρησιμοποίησα κατεψυγμένο, μπορείτε να χρησιμοποιήσετε φρέσκο
- 2 καρότα
- 1 κρεμμύδι
- 1 σκελίδα σκόρδο
- 1 μέτρια πατάτα
- 1,2 λίτρο ζωμό λαχανικών
- Αλάτι, πιπέρι
- Ελαιόλαδο για σοτάρισμα των λαχανικών και για πάνω από την σούπα
- 100 γρ. τυρί κατσικίσιο, τριμμένο
- Κρουτόν για γαρνίρισμα
- Στο μούλτι κόψτε το κρεμμύδι, σκόρδο, πατάτα και τα καρότα σε μικρά κομματάκια.
- Ξεπαγώστε το μπρόκολο και το πλύνετέ το.
- Πάρτε μια βαθιά κατσαρόλα και προσθέστε περίπου 5 κουταλιές της σούπας ελαιόλαδο.
- Σωτάρετε σε μέτρια θερμοκρασία τα ψιλοκομμένα λαχανικά.
- Ρίξτε το ζωμό λαχανικών, το αλάτι και το πιπέρι.
- Βράστε για περίπου 10 λεπτά.
- Προσθέστε το μπρόκολο και συνεχίστε να βράζετε για άλλα 10-15 λεπτά.
- Αφαιρέστε από τη φωτιά και τοποθετήστε τα πάντα στο μπλέντερ σας.
- Πολύ προσεκτικά ξεκινήστε την πολτοποίηση τους.
- Επιστρέψτε τα στην κατσαρόλα και δοκιμάστε για να δείτε αν χρειάζεται περισσότερο αλάτι και πιπέρι.
- Αφαιρέστε από τη φωτιά και σερβίρετε, βάζοντας από πάνω το τριμμένο τυρί και τα κρουτόν.
