Just like in all Christian countries, Christmas is a big fest in Greece too. During the old days and because Greece is surrounded by sea, people here used to decorate a ship. But as globalization reached our country too, we adopted the northern Europe’s tree which we decorate with ornaments and balls.
As in every fest we have special sweets that we make and offer to our loved ones and friends. Melomakarona, Kourabiedes and Diples are some of the traditional sweets of Christmas. Also during Christmas Day we make the turkey just like the northern Americans, only we make the stuffing with rice and chestnuts and we serve the bird with potatoes from the oven. On New Year’s Eve and after 12:00 at night, when the New Year has entered, we cut the Vasilopita in honor of Saint Basil and what he did during the first Christian years.
I wanted to do something different and try something new for this year and so I made these Chocolate Kourabiedes from a recipe by Stelios Parliaros a very well-known Greek pastry chef.
They were pretty good, but of course they didn’t taste like kourabiedes. So, and since I crave them more often now that we approach Christmas, I think I will make the original ones and post about them too in a coming post.

Chocolate Kourabiedes
Ingredients
200 gr. butter
80 gr. caster sugar
100 gr. almonds, roasted and grated
260 gr. flour
20 gr. cocoa powder
For the Glaze
200 gr. caster sugar
2 tbsp milk
1 tsp cocoa
Instructions
Preheat oven 175° C/345°F.
Put all ingredients in the mixer bowl and mix until it becomes a smooth dough.
Put the dough on a parchment paper and put it in the fridge to stabilize for half an hour.
Take it out and roll it to a 1-1,5 cm thick layer.
With Christmas molds make biscuits.
Bake them for 12 to 15 minutes.
Take them out of the oven and let them cool.
For the Glaze
We mix the glaze ingredients until they become a thick batter.
If the batter is too thick, pour ½ tsp of milk until it is thick but can be spread on top of the cookies.
Brush the cookies.
Let it stabilize and serve.

- 20 gr./1 tbsp + 1 tsp cocoa powder

- 200 γρ. βούτυρο
- 80 γρ. ζάχαρη άχνη
- 100 γρ. αμύγδαλα, καβουρδισμένα και τριμμένα
- 260 γρ. αλεύρι
- 20 γρ. κακάο σε σκόνη
- 200 γρ. ζάχαρη άχνη
- 2 κ.σ. γάλα
- 1 κ.γ. κακάο σε σκόνη
- Προθερμαίνουμε το φούρνο στους 175 ° C.
- Βάζουμε όλα τα συστατικά στον μπολ του μίξερ και αναμειγνύουμε έως ότου γίνει μια μαλακή ζύμη.
- Απλώνουμε τη ζύμη σε λαδόκολλα σε πάχος 1 με 1,5 cm και τη βάζουμε στο ψυγείο να σταθεροποιηθεί για μισή ώρα.
- Τη βγάζουμε από το ψυγείο και με χριστουγεννιάτικα κουπ πατ κάνουμε διάφορα σχήματα.
- Ψήνουμε για 12 με 15 λεπτά.
- Βγάλτε τα από το φούρνο και αφήστε τα να κρυώσουν.
- Ανακατεύουμε όλα τα υλικά μέχρι να γίνει ένα παχύρευστο μίγμα το οποίο όμως να μπορεί να απλωθεί.
- Αν το μίγμα είναι πολύ παχύρευστο, ρίξτε ½ κ.γ. γάλακτος για να αραιώσει λίγο, ώστε να μπορεί να απλωθεί στους κουραμπιέδες.
