We talked about apples, with the Apple Cider Doughnuts. We talked about pumpkins with the Pumpkin and Zucchini Kecap Manis Stir-fry. I think it is high time, we talked about pomegranate too. Pomegranate is another autumn fruit that apart from its unique flavor, has so many powerful ingredients in it.
As Wikipedia states: “Pomegranate aril juice provides about 16% of an adult’s daily vitamin C requirement per 100 ml serving, and is a good source of vitamin B5, potassium and natural phenols, such as ellagitannins and flavonoids. Pomegranates are listed as high-fiber in some charts of nutritional value. That fiber is entirely contained in the edible seeds which also supply unsaturated oils. In preliminary laboratory research and clinical trials, juice of the pomegranate may be effective in reducing heart disease risk factors.”
But apart from all this medical information regarding the nutritional value of pomegranate, it is also so tasty and gives such a unique flavor to everything you put it in.
So, I decided to make myself a nice, healthy, tasty and filling green salad adding pomegranate seeds and a beautiful pomegranate juice vinaigrette. I substituted some portion of vinegar with pomegranate juice which is tangy, but not as strong as the vinegar.
The portion for this salad is for one, as I was all alone at home and I had the pleasure of enjoying it by myself. Not bad, not bad at all. If you want to make it you can double it or triple it, it is all up to you, but do try it!
Green Salad with Pomegranate Seeds and Vinaigrette
Ingredients
For the Salad
4 cremini mushrooms, sliced
4 leaves of salad
2 handfuls of spinach
2 handfuls of rucola
1/2 cup of pomegranate seeds
½ tsp Herbes de Provence
For the Mushrooms
2 tbsp butter
¼ cup red wine
¼ tsp garlic powder
¼ tsp onion powder
Salt and pepper
For the Pomegranate Vinaigrette
4 tbsp olive oil
1 tbsp red wine vinegar
3 tbsp pomegranate juice
2 tbsp honey
Instructions
For the Pomegranate Vinaigrette
Place all ingredients in a glass bowl and microwave in high for 30 seconds.
Put aside and let it cool, while preparing the salad.
For the mushrooms
Add the margarine to a skillet in medium heat.
Throw the mushrooms, herbs and spices.
Pour the wine and let them cook until all liquids are absorbed.
Remove from heat and put them aside.
Assembly
Cut the salad leaves and arrange them along with the rest of the greens in a deep bowl.
Add the pomegranate seeds.
Arrange the mushrooms on top of the seeds and greens.
Pour about four tbsp. of the vinaigrette and mix well.

- 4 λευκά μανιτάρια, κομμένα σε φέτες
- 4 φύλλα σαλάτα
- 2 χούφτες σπανάκι
- 2 χούφτες ρόκα
- ½ φλιτζάνι σπόρους ροδιού
- ½ κουταλάκι του γλυκού βότανα Προβηγγίας
- 2 κουταλιές της σούπας βούτυρο
- ¼ φλιτζάνι κόκκινο κρασί
- ¼ κ.γ. σκόνη σκόρδου
- ¼ κ.γ. σκόνη κρεμμύδι
- Αλάτι και πιπέρι
- 4 κ.σ. ελαιόλαδο
- 1 κ.σ. κόκκινο ξίδι κρασιού
- 3 κ.σ. χυμός ροδιού
- 2 κ.σ. μέλι
- Τοποθετήστε όλα τα συστατικά σε ένα γυάλινο μπολ και βάλτε τα στο φούρνο μικροκυμάτων στην υψηλή θερμοκρασία για 30 δευτερόλεπτα.
- Βάλτε στην άκρη και αφήστε το να κρυώσει, ενώ ετοιμάζετε τη σαλάτα.
- Προσθέστε τη μαργαρίνη σε ένα τηγάνι σε μέτρια φωτιά.
- Ρίξτε τα μανιτάρια, τα βότανα και τα μπαχαρικά.
- Σβήστε με το κρασί και αφήστε να σωταριστούν μέχρι όλα τα υγρά τους να απορροφηθούν.
- Βάλτε τα στην άκρη.
- Κόψτε τα φύλλα σαλάτας και τακτοποιήστε τα μαζί με τα υπόλοιπα πράσινα σε ένα βαθύ μπολ.
- Προσθέστε το ρόδι και τα μανιτάρια.
- Ρίξτε περίπου 4 κ.σ. από τη βινεγκρέτ και ανακατέψτε καλά.
