All these years I’ve been blogging I met the most wonderful people. Through this hobby of mine, I got to know so many people around the globe, enter their kitchens and learn things about their lives and countries. Thanks to them I have cooked so many wonderful recipes and learned not only new dishes and ways of cooking but also many interesting things about local cultures.
One of these fellow bloggers whom I follow regularly is Sissi. Sissi lives in the French-speaking part of Switzerland.

Sissi has a very thorough knowledge regarding the Japanese kitchen and generally the Asian way of cooking. I love her recipes and although most of them are quite hot for my stomach to bare, with some alterations that are necessary I find her recipes to be one of the most delicious ones.
When my family asks for Asian, I know exactly where to look up to find a delicious, tried and true recipe to cook. I have tried this recipe a long time ago but somehow it pilled up at the bottom of others and I totally forgot about it. As I was arranging my photo files I saw this delicious Chicken with Miso and Garlic Sauce and I thought I should share it with you. It is really, really good, restaurant style Asian dish only homemade which makes it even better. I made some small alterations to the original recipe but other than those I followed it as it was. - 3 chicken breasts cut in small cubes
- 2 medium eggplants
- 2 green peppers, julienned
- salt, pepper
- 4 tbsp white miso
- 4 tbsp mirin
- 2 tbsp honey
- 4 tbsp low sodium soy sauce
- 2 garlic cloves, minced
- Cut the eggplants in cubes and sprinkle on them some salt.
- In a drainer leave them for 20 minutes to let go all their waters.
- In the meantime, in a small bowl combine all the sauce ingredients and put it aside.
- Heat two tbsp of sesame oil in a wok.
- Add the peppers and sauté until they start to soften.
- Add the chicken, salt it and pepper it and sauté until is half done about 2 minutes.
- Following, add the eggplant and stir-fry until they are fully cooked about 2 minutes.
- At the end add the sauce lower heat to medium/low and let cook for 2 to 3 minutes.
- Serve with rice or noodles.
- 3 στήθη κοτόπουλου, 700 γρ., κομμένο σε μικρούς κύβους
- 2 μεσαίου μεγέθους μελιτζάνες
- 2 πιπεριές πράσινες, κομμένες σε μπαστουνάκια
- 4 κ.σ. λευκό μίζο
- 4 κ.σ. κρασί μίριν
- 2 κ.σ. μέλι
- 4 κ.σ. σόγια σως με λιγότερο αλάτι
- 2 σκελίδες σκόρδο, λιωμένες
- Σησαμέλαιο για το σωτάρισμα
- Κόψτε τις μελιτζάνες σε μικρούς κύβους και πασπαλίστε τις με αλάτι.
- Αφήστε τις 20 λεπτά να στραγγίσουν.
- Ανακατέψτε σε ένα μπολ όλα τα υλικά της σάλτσας και βάλτε το στην άκρη.
- Σε ένα γουόκ ή μεγάλο τηγάνι ρίξτε μερικές κουταλιές σησαμέλαιο και σε μέτρια/υψηλή φωτιά και σωτάρετε τις πιπεριές για δύο λεπτά.
- Ρίξτε το κοτόπουλο και σωτάρετε για άλλα δυο λεπτά.
- Προσθέστε τις μελιτζάνες και σωτάρετε για άλλα δύο λεπτά.
- Ρίξτε τη σάλτσα, χαμηλώστε τη φωτιά στο χαμηλό και αφήστε να βράσουν για δύο με τρία λεπτά.
- Σερβίρετε με ρύζι μπασματι ή noodles.
