I am so happy spring is here! That means that summer is on its way and that further means that, we will get rid of all our heavy winter clothing and start wearing our t-shirts and décolleté dresses!
I love summer, even though it gets pretty hot here in Greece some days. But the sun sets very late, the beach is always there to offer us some time of relaxation and joy and then there is the food! Oh, what can I say about the food! Even the food tastes differently during summer. Yes, this is true. It is one thing to eat for example a stuffed squid or a spanakopita at your home during winter and it is completely another thing to eat all these nearby the sea during summer. The sun, the warm weather, the sea, the breeze coming from it, just alter the taste of everything edible.
Bouyourdí is a Greek mezé, an appetizer and can be eaten any time of the year, but I think the best season for it, is summer. Along with a glass of cold ouzo and warm straight from the oven bread, I am telling you it is pure heaven.
The word Bouyourdí comes from the Turkish word buyruk which means order, command usually with an unpleasant content. Probably this dish was named like this, because it can be very hot and because it is either cooked in a clay pot with a lid or wrapped in aluminum foil so as no one can see the content.
I made it in a clay pot and cooked the kids’ friendly version, but if you decide to make it, you can add cayenne pepper or hot paprika up the level where it satisfies your taste. It is a very easy, very tasty appetizer and once you start digging into it with your slice of bread, I can assure you, you will stop only when nothing is left on the pot!
Bouyourdí (Feta Cheese in the Oven with Vegetables)
Ingredients
500 gr. / 17 oz. feta cheese
½ cup tomato puree
1 yellow pepper, sliced (you can put any type of pepper and any type of color)
1 tomato, sliced
1 onion, sliced (optional)
¼ cup olive oil
1 tbsp sugar
1 tsp dried oregano
½ tsp dried basil
½ tsp green and red pepper
Pinch of salt
Instructions
Preheat oven to 200°C/ 400°F.
Take a clay pot or a pot with a lid.
Pour the olive oil.
Pour ¼ cup of the tomato puree.
Slice the feta cheese in 3cm/1 in thick slices.
Arrange the feta slices on the pot.
Put the tomato slices on top of the feta.
Add the pepper slices on top of the tomato and if you put onion add it too.
Pour the rest ¼ cup of the tomato puree.
Add all the herbs, sugar and the salt and pepper.
Put the pot in the oven at the lowest level and bake for about 15 minutes with the lid on and another 15 to 20 minutes without it. It is done when the peppers have taken a nice golden color and they are soft.
Serve with warm bread and ouzo!

- 500 γρ. τυρί φέτα
- ½ φλ. χυμό ντομάτας
- 1 κίτρινη πιπεριά, κομμένη σε φέτες (μπορείτε να βάλετε οποιοδήποτε τύπο πιπεριάς και κάθε είδους χρώμα)
- 1 ντομάτα, κομμένη σε φέτες
- 1 κρεμμύδι, σε φέτες (προαιρετικά)
- ¼ φλ. ελαιόλαδο
- 1 κ.σ. ζάχαρη
- 1 κ.γ. αποξηραμένη ρίγανη
- ½ κ.γ. ξηρό βασιλικό
- ½ κ.γ. πράσινο και κόκκινο πιπέρι
- Μία πρέζα αλάτι
- Προθερμάνετε το φούρνο στους 200° C.
- Πάρτε ένα πήλινο ή μια κατσαρόλα με καπάκι.
- Περιχύστε με το ελαιόλαδο.
- Ριξτε ¼ του μίγματος του χυμού της ντομάτας.
- Κόψτε τη φέτα σε σε χοντρές φέτες περίπου 2 με 3 cm.
- Τακτοποιήστε τη φέτα στο πήλινο σε μία στρώση.
- Βάλτε τις φέτες ντομάτας πάνω από την φέτα.
- Προσθέστε τις ροδέλες της πιπεριάς πάνω από τη ντομάτα και αν βάζετε το κρεμμύδι το προσθέτετε και αυτό.
- Ρίξτε το υπόλοιπο ¼ φλιτζανιού του χυμού ντομάτας.
- Προσθέστε όλα τα βότανα, τη ζάχαρη και το αλάτι και το πιπέρι.
- Βάλτε το πήλινο στο φούρνο στο χαμηλότερο επίπεδο και ψήστε για περίπου 15 λεπτά, με κλειστό καπάκι και άλλα 15 με 20 λεπτά χωρίς αυτό. Είναι έτοιμο όταν οι πιπεριές έχουν πάρει ένα ωραίο χρυσαφί χρώμα και να είναι μαλακές.
- Σερβίρετε με ζεστό ψωμί και ούζο!
