Stuffed Tsoureki

One of the staples of Greek Easter is undoubtedly tsoureki. Tsoureki is a sweet bread that resembles the Jewish challah only with some variations. The word tsoureki comes from the Turkish word “corek” that means any bread that is made with yeast. There are several sweet and savory variations of corek depending on the area in which they are made.

In Greece it came probably with the ottoman occupation and it was incorporated in our culinary culture as a sweet bread made with milk, eggs and butter for Easter. Tsoureki with its transformation from flour to a bread symbolizes the resurrection of Christ and its shape as a braid the ouster of evil spirits.

Apart from flour, eggs, milk and butter, tsoureki has two very special and distinctive spices; mastic and mahleb. Pistacia lentiscus or mastic tree is a dioeciously evergreen shrub or small tree of the pistacio genus growing up to 4 m tall which is cultivated for its aromatic resin, mainly on the Greek island of Chios.

Stuffed Tsoureki

Mastic trees are the Chios’ trademark and they are a very important economic factor of the island. From the ancient years their cultivation was promoted, and their produce was traded throughout Mediterranean Sea. The tree produces a resin with a very distinct and strong flavor. It is used in desserts, sweet breads, spirits etc. to aromatize them. Herodotus was the first to describe their resin and its unique flavor around 5th century BC. The resin comes out of the bark of the tree like tears. According to a medieval myth when Saint Isidoros was tortured by the Romans, mastic trees started crying as a sign of pain and agony. Mahleb is an aromatic spice made from the seeds of a species of cherry, Prunus mahaleb. The cherry stones are cracked to extract the seed kernel, which is about 5 mm diameter, soft and chewy on extraction. The seed kernel is ground to a powder before use. Its flavor is like a combination of bitter almond and cherry, and similar also to marzipan.

Stuffed Tsoureki

Mahleb is used in small quantities to sharpen sweet foods and cakes. It has been used for centuries in the Middle East and the surrounding areas as a flavoring for baked goods. Recipes calling for the fruit or seed of the “ḫalub” date back to ancient Sumer. In recent decades, it has been slowly entering mainstream cookbooks in English.

As our Easter is in two weeks, one week later than the catholic, I am in the process of experimenting. My usual tsoureki recipes need many hours to rise so when I bumped on this recipe, I thought it was something I could make even during weekdays. I changed some things to come closer to tsoureki dough and I also stuffed it with choco tahini spread. It was absolutely delicious and very easy to make compared to the classic. Cocoa Tahini Stuffed Sweet Bread

  • 240 gr. all-purpose flour
  • 45 gr. instant mashed potato flakes
  • 35 gr. nonfat dry milk
  • 240 gr. lukewarm water
  • 60 gr. butter, at room temperature
  • 5 mastic tears (if you don’t have use 1 tsp vanilla extract)
  • ½ tsp ground mahleb
  • 2 tsp dry yeast
  • 4 tbsp sugar + 1 tsp
  • ½ tsp salt
  • Choco tahini spread for the filling
  • 1 egg lightly beaten for brushing the dough
Instructions/ Εκτέλεση
  1. In your blender add the mastic tears plus the 1 tsp of sugar.
  2. Blend until mastic is ground.
  3. In your stand mixer add all the dry ingredients.
  4. Mix once or twice.
  5. Add all the liquids and start to mix with the hook.
  6. After about three minutes you will have a soft, smooth dough.
  7. Place the dough in a lightly greased bowl, cover, and let it rise for 60 minutes, until it's nearly doubled in bulk.
  8. Divide the dough into four equal pieces.
  9. Shape each piece into a ball, cover the balls, and allow them to rest for 15 minutes.
  10. On a lightly greased or floured work surface, roll one piece of dough into a 25 cm / 10 in. circle.
  11. Place the circle on a piece of parchment and spread about four tbsp of choco tahini spread leaving about ½ cm / ¼in. of bare dough around the perimeter.
  12. Roll out a second circle the same size as the first and place it on top of the filling-covered circle.
  13. Now I made two breads with two dough layers each.
  14. You can make one put all four dough layers one on top of the other.
  15. Place a 6,5 cm / 2.5 in. round glass in the center of the dough circle as a guide.
  16. With a sharp knife, cut the circle into 16 equal strips, from the cutter to the edge, through all the layers.
  17. Using two hands, pick up two adjacent strips and twist them away from each other twice so that the top side is facing up again.
  18. Repeat with the remaining strips of dough so that you end up with eight pairs of strips.
  19. Pinch the pairs of strips together to create a star-like shape with eight points.
  20. Remove the cutter.
  21. Transfer the star on the parchment to a baking sheet.
  22. Cover the star and let it rise until it becomes noticeably puffy, about 45 minutes.
  23. While the star is rising, preheat the oven to 200°C / 400°F.
  24. Brush the star with a thin coat of the beaten egg.
  25. Bake it for 12 to 15 minutes, until it's nicely golden.

  • 240 γρ. Αλεύρι για όλες τις χρήσεις
  • 45 γρ. Πουρές σε σκόνη
  • 35 γρ. άπαχο γάλα σε σκόνη
  • 240 γρ. χλιαρό νερό
  • 60 γρ. βούτυρο, σε θερμοκρασία δωματίου
  • 5 δάκρυα μαστίχας
  • ½ κ.γ. αλεσμένο μαχλέπι
  • 2 κ.σ. ξηρή μαγιά
  • 4 κ.σ. ζάχαρη + 1 κ.γ.
  • ½ κ.γ. αλάτι
  • Ταχίνι σοκολάτας για τη γέμιση
  • 1 αυγό χτυπημένο ελαφρά για το άλλειμα της ζύμης
Instructions/ Εκτέλεση
  1. Στο μπλέντερ σας προσθέστε τα δάκρυα μαστίχας συν το 1 κουταλάκι του γλυκού ζάχαρη.
  2. Αλέστε μέχρι η μαστίχα να γίνει σκόνη.
  3. Στο μίξερ σας προσθέστε όλα τα ξηρά συστατικά.
  4. Ανακατέψτε μία ή δύο φορές.
  5. Προσθέστε όλα τα υγρά και βάλτε το σε λειτουργία με το γάντζο.
  6. Μετά από περίπου τρία λεπτά θα έχετε μια μαλακή, λεία ζύμη.
  7. Τοποθετήστε τη ζύμη σε ένα ελαφρά λαδωμένο μπολ, καλύψτε, και αφήστε το να αυξηθεί για 60 λεπτά, μέχρι να διπλασιαστεί ο όγκος του.
  8. Χωρίστε τη ζύμη σε τέσσερα ίσα κομμάτια.
  9. Σχηματίστε κάθε κομμάτι σε μπάλα, καλύψτε τις μπάλες, και αφήστε τις να ξεκουραστούν για 15 λεπτά.
  10. Σε μια ελαφριά αλευρωμένη επιφάνεια εργασίας, ανοίξτε το ένα κομμάτι της ζύμης σε έναν κύκλο με διάμετρο 25 cm.
  11. Τοποθετήστε την ανοιγμένη ζύμη σε ένα κομμάτι χαρτί ψησίματος και απλώστε περίπου τέσσερις κουταλιές της σούπας ταχίνι αφήνοντας ½ cm περιθώριο γύρω από την περίμετρο.
  12. Ανοίξτε ένα δεύτερο κομμάτι ζύμης σε κύκλο στο ίδιο μέγεθος με το πρώτο και τοποθετήστε το πάνω από τον καλυμμένο με γέμιση κύκλο.
  13. Εγώ έκανα δύο ψωμιά με δύο στρώματα ζύμης το καθένα.
  14. Εσείς μπορείτε να κάνετε ένα και να βάλετε και τα τέσσερα στρώματα ζύμης το ένα πάνω στο άλλο.
  15. Τοποθετήστε ένα ποτήρι ανάποδα με διάμετρο 6,5 cm στο κέντρο του κύκλου ως οδηγό.
  16. Με ένα κοφτερό μαχαίρι, κόψτε τον κύκλο σε 16 ίσες λωρίδες, από το ποτήρι μέχρι την άκρη, μέσα από όλα τα στρώματα.
  17. Χρησιμοποιώντας δύο χέρια, σηκώστε δύο γειτονικές λωρίδες και στρίψτε τις τη μία μακριά από κάθε άλλη δύο φορές, έτσι ώστε η επάνω πλευρά να έρθει προς τα επάνω και πάλι.
  18. Επαναλάβετε με τις υπόλοιπες λωρίδες ζύμης, έτσι ώστε να καταλήξετε με οκτώ ζεύγη λωρίδες.
  19. Τσιμπήστε τα ζεύγη των λουρίδων μαζί για να δημιουργήσετε ένα αστέριόπως στο σχήμα με οκτώ σημεία.
  20. Αφαιρέστε το ποτήρι.
  21. Μεταφέρετε το αστέρι μαζί με το χαρτί ψησίματος σε ένα ταψί.
  22. Καλύψτε το αστέρι και αφήστε το να φουσκώσει για περίπου 45 λεπτά.
  23. Όσο το αστέρι φουσκώνει, προθερμάνετε το φούρνο στους 200°C.
  24. Αλείψτε το αστέρι με το χτυπημένο αυγό.
  25. Ψήστε το για 12 έως 15 λεπτά, μέχρι να πάρει ένα όμορφο χρυσό χρώμα.
