Janet Coffee Cake

 

I know it has been a while since my last post, but I have a very good excuse for that: SUMMER!!! I am sure that you can understand that when summer comes here in Greece everything is different. You cannot possibly sit inside and write on a computer. All you need is your swimsuit and a towel and the sea. We went on vacations in Crete and we had a great time this year. Actually, we had such a great time that we didn’t want it to end. But as you know, in life all good things end up really soon. So, here I am sitting in front of my computer yet giving you another recipe. I cooked a lot during summer and I have many recipes for you. I will post one at a time. As I told you I cooked a lot. Some of them were good, some not worth mentioning them. As I stated in my first post I will only write about really good recipes and not mediocre ones. Thus, If I do not post very often is not because I do not cook or bake, but it is because the things I make are not good enough to become famous. As you know there are thousands of recipes on the internet but how many of them really worth the time and effort? Let me tell you, not as many as we believe. Anyway, The cake I have for you certainly is a keeper. I found it in a blog called sweetnicks and she adapted it from Every Day with Rachel Ray. I tried it and it was really tasteful and easy to make. So, let’s make it.

Janet’s Chocolate Chip Coffee Cake
Ingredients

2 cups all purpose flour

1 1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 1/4 cup sugar

1 stick approx. 112 grams butter at room temperature

2 large eggs

1 cup sour cream I substituted with yogurt

1 tsp pure vanilla extract

1 cup chocolate chips

Instructions

Preheat oven to 175°C / 350°F.

Grease a 26 cm / 10 in. round baking pan.

In a medium bowl mix the flour, baking powder, salt and baking soda.

In a small bowl combine 1/4 cup sugar with the cinnamon.

In an electric mixer beat the butter with the 1 cup sugar until fluffy about 2 minutes.

Then add the eggs one at a time, add the cream or yogurt and the vanilla.

Fold in the flour at low speed spoonful by spoonful until just combined.

Pour half the batter into the baking pan and sprinkle half the cinnamon-sugar mix and half the chocolate chips.

Above it spoon the remaining batter and finish it up by sprinkling the remaining cinnamon-sugar mix and the chocolate chips.

Bake until golden.

It took me around 30 to 35 minutes.

Κέικ με Γέμιση Ζάχαρης και Σοκολάτας

Ingredients/ Συστατικά
  • 2 φλ. αλεύρι για όλες τις χρήσεις
  • 2 κ.γ. μπέικιν πάουντερ
  • ½ κ.γ. μαγειρική σόδα
  • ½ κ.γ. αλάτι
  • 1 κ.γ. κανέλα
  • 1¼ φλ. ζάχαρη
  • 112 γρ. βούτυρο σε θερμοκρασία δωματίου
  • 2 μεγάλα αυγά
  • 1 φλ. γιαούρτι
  • 1 κ.γ. εκχύλισμα βανίλιας
  • 2 φακελάκια σταγόνες σοκολάτας
Instructions/ Εκτέλεση
  1. Προθερμαίνετε το φούρνο στους 175° C.
  2. Βουτυρώστε μια μία στρογγυλή φόρμα με διάμετρο 26 cm.
  3. Σε ένα μέτριο μπολ ανακατέψτε το αλεύρι, το μπέικιν, το αλάτι και τη μαγειρική σόδα.
  4. Σε ένα μικρό μπολ συνδυάστε ¼ φλιτζανιού ζάχαρη με την κανέλα.
  5. Στο μίξερ χτυπήστε το βούτυρο με το 1 φλ. ζάχαρη μέχρι να αφρατέψει περίπου 2 λεπτά.
  6. Στη συνέχεια προσθέστε τα αυγά ένα ένα, προσθέστε το γιαούρτι και τη βανίλια.
  7. Ρίξτε το αλεύρι κουταλιά από κουταλιά και ανακατέψτε με χαμηλή ταχύτητα μέχρι να ενσωματωθεί.
  8. Ρίξτε μισό μίγμα στη φόρμα και πασπαλίστε με το μισό μίγμα κανέλας-ζάχαρης και τις μισές σταγόνες σοκολάτας.
  9. Ρίξτε το υπόλοιπο μίγμα και σκορπίστε την υπόλοιπη ζάχαρη και τις σταγόνες σοκολάτας.
  10. Ψήστε μέχρι να βγαίνει καθαρό το μαχαίρι όταν το βυθίζετε στο κέικ.
  11. Μου πήρε περίπου 30 με 35 λεπτά.
