I am officially back! After taking an obligatory break from blogging, I am back on air. All this period I was away from the net and I mean literally away from blogging, it was really weird.
I had more time to do a few things I wasn’t able to do before, I can tell you this, but on the other hand I was missing all this fun following your blogs, learning your news and what is going on in your kitchens. It was like not being able to contact with friends. Because, truth to be said, even though I know you only via your photos on your blogs, I feel that you are distant friends to me. Thank you all so much for your kind comments and promise I will visit you real soon!
I just want to tell you that I am glad I am back and will be following you again and catch up with what is going on in no time.
Anyway, I was supposed to post these little pots for Mother’s Day, but I guess the computer demon had other plans for me. My Windows crushed and neither I nor my husband could fix the damage. So, just like a good higgly-girl (mothers with children will understand immediately what I mean), I called for an expert to fix the damage. Thank God my documents were all retrieved and now I am posting about these beautiful pots with mascarpone cream and strawberries. They disappeared in no time and they were superb! Very easy to make and if you don’t have mascarpone cheese, you can use cream cheese. They are very close to cheesecake, but they do not have the digestives’ crust. I will definitely make them again! Mascarpone Pots with Strawberries
Ingredients
200 ml heavy cream
1 tbsp caster sugar
500 gr. Mascarpone cheese
150 gr. Caster sugar
2tbsp white rum
11 strawberries cut in pieces
10 tbsp strawberry marmalade
10 lady’s fingers
½ cup milk
2 tbsp white rum
Instructions
In a bowl beat the heavy cream and the 1 tbsp caster sugar until for the heavy cream to have the texture of yogurt. Set aside.
In another bowl beat the mascarpone, the caster sugar and the rum until soft. Incorporate both batters.
In a small bowl put the milk and the 2 tbsp of rum.
Depending on the size of the ramekins you will need between 8 and 10.
Cut the lady’s fingers in such a way so as to fit the bottom of the ramekins.

Baptize them in the milk/rum batter and place them on the bottom of the pots.
With a spoon add about one spoon in each ramekin. Add the strawberry marmalade and the pieces of strawberries. Put in the fridge for couple of hours so as for the ingredients to release their aromas and serve.

Κρέμα Μασκαρπόνε με Φράουλες

- 200 ml κρέμα γάλακτος
- 1 κ.σ. ζάχαρη άχνη
- 500 γρ τυρί μασκαρπόνε
- 150 γρ. ζάχαρη άχνη
- 2 κ.σ. λευκό ρούμι
- 11 φράουλες, κομμένες σε κομμάτια
- 10 κ.σ. φράουλα μαρμελάδα
- 10 σαβαγιάρ
- ½ φλ. γάλα
- 2 κ.σ. λευκό ρούμι
Instructions/ Εκτέλεση
- Σε ένα μπολ, κτυπήστε την κρέμα γάλακτος και τη 1 κ.σ. ζάχαρη άχνη μέχρι η κρέμα να έχει την υφή του γιαουρτιού. Βάζουμε στην άκρη.
- Σε ένα άλλο μπολ χτυπάμε το μασκαρπόνε, τη ζάχαρη άχνη και το ρούμι μέχρι να μαλακώσουν.
- Ενσωματώστε τα δύο μίγματα.
- Σε ένα μικρό μπολ, βάλτε το γάλα και τις 2 κ.σ. ρούμι.
- Ανάλογα με το μέγεθός τους θα χρειαστείτε από 8 έως 10 φορμάκια.
- Κόψτε τα σαβαγιάρ έτσι ώστε να καλύψουν τον πάτο των φορμών.
- Βαφτίστε τα στο μίγμα γάλα/ρούμι και τοποθετήστε τα στον πάτο από τα φορμάκια.
- Με ένα κουτάλι γεμίστε τα με την κρέμα μασκαρπόνε.
- Προσθέστε το μαρμελάδα φράουλα και τα κομμάτια φράουλας.
- Βάλτε τα στο ψυγείο για μερικές ώρες έτσι ώστε τα συστατικά να απελευθερώσουν τους αρώματα τους. Μισή ώρα πριν τα σερβίρουμε τα βγάζουμε από το ψυγείο.
