Tsoureki, panarët (Arbërisht), choreg or “chorek” in Armenian, çörək in Azerbaijani, kozunak in Bulgarian, cozonac in Romanian or çörek in Turkish, is a sweet, egg-enriched bread, rooted in the cuisines of Western and Central Asia. It is formed of braided strands of dough. Such rich brioche-like breads are also traditional in many other countries, such as Hungary and the Czech Republic. Examples of similar breads from other cultures are badnji kruh in Croatian cuisine, folar de páscoa in Portuguese cuisine, Brioche in French, kulich in Russian cuisine, panettone in Italian cuisine and challah in Jewish cuisine.

Greek tsoureki is usually made during Holy Week before Easter and it is consumed on Easter Saturday and Sunday. Nevertheless, throughout the year bakeries carry several types of tsoureki either plain or stuffed with praline or covered with chocolate either white or milk. Also, some of them are infused with syrup and dried fruits. The difference of Greek tsoureki is that in the dough we add mastic. Pistacia lentiscus or mastic tree is dioeciously evergreen shrub or small tree of the pistachio genus growing up to 4 m tall which is cultivated for its aromatic resin, mainly on the Greek island of Chios.

From the ancient years their cultivation was promoted and their produce was traded throughout Mediterranean Sea. The tree produces a resin with a very distinct and strong flavor. Herodotus was the first to describe their resin and its unique flavor around 5th century BC. The resin comes out of the bark of the tree like tears. According to a medieval myth when Saint Isidoros was tortured by the Romans, mastic trees started crying as a sign of pain and agony. I was reading about the trend of cronuts the other day and I thought to myself why not using tsoureki dough as a donuts dough and see what happens? I did the experiment and it was a complete success. They were so fluffy and delicious, I who I am constantly on a diet, ate three at once and couldn’t stop myself. I urge you to try them and cover them with any frosting or glaze you like because everything matches perfectly with them. They are super delicious and in fact you can make the dough, put it in the fridge and keep it there for up to five days taking out and frying only the quantity you want. The photos are from the second batch because the first one didn’t make it to my photographic table. That good they were. I am giving you two recipes; both of them are tried and true. The first one makes a lesser quantity than the second one. The choice is yours.

Sweet Bread Donuts or Tsounuts 1st Recipe

Ingredients/ Συστατικά
  • 70gr./2.5 oz butter (in this recipe I used original butter)
  • 100 gr. /3.5 oz Milk
  • 200 gr. /7 oz. sugar
  • 5 gr. /1 tsp mahlepi grated
  • 5 gr. /1 tsp mastic grated
  • 100 gr. / 3.5 oz water
  • 40 gr. /1.5 oz fresh yeast (do not use dry or you will lose all the flavor)
  • 650 gr. /23 oz strong flour like Robin Hood
  • 3 eggs
  • Corn oil for frying them
For the Glaze
  • White chocolate
  • Praline
  • Caster sugar and milk for the glaze
Instructions/ Εκτέλεση
  1. Put butter, milk, sugar, mahlepi and mastic in a small saucepan on medium heat and heat until the temperature arrives at 50° C/120° F.
  2. In another saucepan heat the water until lukewarm.
  3. In a bowl break the yeast, throw the water and whisk until dissolved.
  4. Throw the butter mix into the water mix and whisk until everything is incorporated.
  5. Now the fun part; take the mixer and put the hook for kneading.
  6. Throw first the flour and then the liquids and the eggs.
  7. We let the mixer work for fifteen minutes slowly at first, faster afterwards. You know it is ready when, after the 15 minutes, the dough has gathered around the hook.
  8. We flour a big bowl and throw the dough in. We turn on the oven at 30° C/86° F and put the bowl with the dough in, for 1.5 hours covered with a towel.
  9. After the breading time we take the dough out, and with a rolling pin we flatten it to make a sheet about 1 cm / 0.5 in. thick.
  10. With a donuts cutter we cut and reshape the dough until no dough is left.
  11. We place the donuts on the tray.
  12. Put them uncovered in the oven again at 30° C/86° F for half hour.
  13. In a deep pot pour corn oil about 3 to 4 cm / 1 to 1.5 in. from the bottom of the pot and place it on the stove at high temperature.
  14. When the temperature of the oil arrives to 180°C / 356°F, start putting the donuts in.
  15. Don’t put many together so as to easily handle them.
  16. I put 4 per batch.
  17. Be careful they only need about 20 to 30 seconds per side and then flip and another 20 seconds and out.
  18. Let them stand and prepare the glazing either by melting chocolates or by whisking ½ cup caster sugar to 1 tbsp milk.
  19. I also added food coloring to make them red, purple and green.
Note: I know that many of you cannot find mahlep or mastic where you live. You can replace them with vanilla and orange zest respectively.

For the Starter
  • 80 gr. /3 oz. fresh yeast+1tbsp dry yeast
  • 100 gr. /3.5 oz. all-purpose flour
  • ¾ cup lukewarm water
  • 1 tsp anise
  • 1 tsp ground cardamom
  • 1 tsp ground mahlep
For the Tsoureki
  • 1 kilo/2.2 lb. all-purpose flour
  • 1 tbsp vegetable oil
  • 250 gr. /9 oz. butter
  • 350 gr. /12 oz. sugar
  • ¾ cup milk
  • ¾ cup heavy cream
  • 5 eggs
  • 1 tsp ground mahlep
  • 1 tsp ground cardamom
  • 1 tsp ground mastic
  • Corn oil for frying them
For the Glaze
  • White chocolate
  • Praline
  • Caster sugar and milk for the glaze
Instructions/ Εκτέλεση
For the Starter
  1. Crumble the fresh yeast and add it in the lukewarm water.
  2. Add the dry yeast, the flour and the spices and anise.
  3. Whisk and let it stay covered in a warm place for about 45 minutes.
  4. Again you will see after the 45 minutes that it will be double in volume and have bubbles on the surface.
For the Tsoureki
  1. Melt the butter and put it aside.
  2. In a pot pour the milk and the heavy cream and scald them on the stove.
  3. Add the sugar and whisk until it barely melts.
  4. Remove from stove and put aside.
  5. In the mixer bowl put the hook and throw the flour, the mahlep, the mastic, the cardamom.
  6. Add the milk/heavy cream batter and whisk.
  7. Add the starter and continue to whisk.
  8. One by one throw the eggs and the 1 tbsp of veg oil while the mixer continues to whisk.
  9. Finally add the butter and let the mixer work until a soft dough has gathered around the hook in about 15 minutes.
  10. Transfer the dough in a floured bowl, cover it with a towel and let it rest in a warm place for an hour.

Ντόνατς με Ζύμη Τσουρεκιού

  • 70 γρ. βούτυρο
  • 100 γρ. γάλα
  • 200 γρ. ζάχαρη
  • 5 γρ. μαχλέπι τριμμένο
  • 5 γρ. μαστίχα τριμμένη
  • 100 γρ. νερό
  • 40 γρ. νωπή μαγιά (μην χρησιμοποιείτε ξηρή)
  • 650 γρ. αλεύρι σκληρό
  • 3 αυγά
  • Αραβοσιτέλαιο για το τηγάνισμα
Για το Γλάσο
  • Λευκή σοκολάτα
  • Πραλίνα
  • Άχνη ζάχαρη και γάλα για γλάσο
Instructions/ Εκτέλεση
  1. Βάλτε το βούτυρο, το γάλα, τη ζάχαρη, το μαχλέπι και τη μαστίχα σε μια μικρή κατσαρόλα σε μέτρια θερμοκρασία έως ότου το μίγμα να φτάσει στους 50° C.
  2. Σε μια άλλη κατσαρόλα ζεσταίνετε το νερό μέχρι να γίνει χλιαρό.
  3. Σε ένα μπολ σπάστε τη μαγιά, ρίξτε και το νερό και χτυπήστε μέχρι να διαλυθεί η μαγιά.
  4. Ρίξτε επίσης το μίγμα με το βούτυρο στο μίγμα νερού μαγιάς και ανακατέψτε καλά.
  5. Πάρτε το μίξερ και βάλτε τον γάντζο για ζύμωμα.
  6. Ρίξτε πρώτα το αλεύρι και στη συνέχεια τα υγρά και τα αυγά.
  7. Αφήστε το μίξερ για δεκαπέντε λεπτά αργά στην αρχή, πιο γρήγορα εκ των υστέρων να δουλέψει.
  8. Θα γνωρίζετε ότι είναι έτοιμο όταν μετά από τα 15 λεπτά, η ζύμη έχει συγκεντρώθεί γύρω από τον γάντζο.
  9. Αλευρώστε ένα μεγάλο μπολ και ρίξτε τη ζύμη μέσα.
  10. Βάλτε το φούρνο στους 30° C και βάλτε το μπολ με τη ζύμη, για 1.5 ώρα καλυμμένο με μια πετσέτα.
  11. Μετά από αυτή την ώρα βγάλτε τη ζύμη έξω, και με τον πλάστη φτιάξτε ένα φύλλο περίπου 1 cm παχύ.
  12. Με ένα κόφτη ντόνατς κόψτε τη ζύμη σε ντόνατς.
  13. Τοποθετείστε τα ντόνατς σε ένα ταψί.
  14. Βάλτε τα ακάλυπτα στο φούρνο και πάλι στους 30° C για μισή ώρα.
  15. Σε μια βαθιά κατσαρόλα ρίξτε το λάδι καλαμποκιού να γεμίσει 3 έως 4 cm από τον πάτο της κατσαρόλας και τοποθετήστε το στο μάτι της κουζίνας σε υψηλή θερμοκρασία.
  16. Όταν η θερμοκρασία του λαδιού φθάσει στους 180° C, αρχίστε να βάζετε τα ντόνατς.
  17. Μην τοποθετείτε πολλά μαζί, έτσι ώστε να μπορείτε να τα χειριστείτε εύκολα.
  18. Εγώ έβαλα 4 ανά παρτίδα.
  19. Να είστε προσεκτικοί χρειάζονται μόνο περίπου 20 έως 30 δευτερόλεπτα ανά πλευρά και στη συνέχεια τα γυρίζετε και ακόμα 20 δευτερόλεπτα από την άλλη πλευρά και έξω.
  20. Ετοιμάστε τα γλάσα είτε λιώνοντας λευκή ή σοσκολάτα γάλακτος, είτε ανακατεύοντας ½ φλιτζάνι άχνη ζάχαρη με 1 κουταλιά της σούπας γάλα.
  21. Στο τελευταίο πρόσθεσα χρώματα ζαχαροπλαστικής για να γίνουν μωβ, κόκκινα και πράσινα.

Ντόνατς με Ζύμη Τσουρεκιού

Ingredients/ Συστατικά
Για το Προζύμι
  • 80 γρ. νωπή μαγιά + 1 κ.σ. ξηρή μαγιά
  • 100 γρ. αλεύρι σκληρό (εγώ χρησιμοποίησα Robin Hood)
  • ¾ φλ. χλιαρό νερό
  • 1 κ.γ. γλυκάνισο
  • 1 κ.γ. κάρδαμο τριμμένο
  • 1 κ.γ. μαχλέπι τριμμένο
Για το Τσουρέκι
  • 1 κιλό αλεύρι σκληρό (Robin Hood)
  • 1 κ.σ. φυτικό λάδι
  • 250 γρ. βούτυρο
  • 350 γρ. ζάχαρη
  • ¾ φλ. γάλα
  • ¾ φλ. Κρέμα γάλακτος 35% λιπαρά
  • 5 αυγά
  • 1 κ.γ. μαχλέπι τριμμένο
  • 1 κ.γ. κάρδαμο τριμμένο
  • 1 κουταλάκι μαστίχα τριμμένη
Για το Γλάσο
  • Λευκή σοκολάτα
  • Πραλίνα
  • Άχνη ζάχαρη και γάλα για γλάσο
Instructions/ Εκτέλεση
Για το Προζύμι
  1. Τρίψτε τη νωπή μαγιά και προσθέστε τη στο χλιαρό νερό.
  2. Προσθέστε την ξηρή μαγιά, το αλεύρι, τα μπαχαρικά και το γλυκάνισο.
  3. Ανακατέψτε και αφήστε το να μείνει καλύμένο σε ζεστό μέρος για περίπου 45 λεπτά.
  4. Και πάλι θα δείτε μετά τα 45 λεπτά ότι θα διπλασιαστεί σε όγκο και θα έχει φυσαλίδες στην επιφάνεια.
Για το Τσουρέκι
  1. Λιώστε το βούτυρο και βάλτε το στην άκρη.
  2. Σε μια κατσαρόλα ρίξτε το γάλα και την κρέμα γάλακτος και ζεστάνετέ τα στην εστία.
  3. Προσθέστε τη ζάχαρη και ανακατέψτε μέχρι να λιώσει ελαφρά.
  4. Βγάλτε από την εστία και αφήστε το στην άκρη.
  5. Στο μπωλ του μίξερ, βάλτε το γάντζο και ρίξτε το αλεύρι, το μαχλέπι, τη μαστίχα και το κάρδαμο.
  6. Προσθέστε το γάλα/ κρέμα γάλακτος και αφήστε το μίξερ να τα χτυπήσει.
  7. Προσθέστε το προζύμι και συνεχίστε να τα χτυπάτε.
  8. Ένα-ένα ρίξτε τα αυγά και τη 1 κ.σ. σπορέλαιου ενώ το μίξερ συνεχίζει να χτυπάει.
  9. Τέλος προσθέστε το βούτυρο και αφήστε το μίξερ να λειτουργεί μέχρι μια μαλακή ζύμη να συγκεντρώθει γύρω από το γάντζο σε περίπου 15 λεπτά.
  10. Μεταφέρετε τη ζύμη σε ένα αλευρωμένο μπολ, σκεπάστε με μια πετσέτα και αφήστε το να ξεκουραστεί σε ζεστό μέρος για μία ώρα.
  11. Μετά από αυτή την ώρα βγάλτε τη ζύμη έξω, και με τον πλάστη φτιάξτε ένα φύλλο περίπου 1 cm παχύ.
  12. Με ένα κόφτη ντόνατς κόψτε τη ζύμη σε ντόνατς.
  13. Τοποθετείστε τα ντόνατς σε ένα ταψί.
  14. Βάλτε τα ακάλυπτα στο φούρνο και πάλι στους 30° C για μισή ώρα.
  15. Σε μια βαθιά κατσαρόλα ρίξτε το λάδι καλαμποκιού να γεμίσει 3 έως 4 cm από τον πάτο της κατσαρόλας και τοποθετήστε το στο μάτι της κουζίνας σε υψηλή θερμοκρασία.
  16. Όταν η θερμοκρασία του λαδιού φθάσει στους 180° C, αρχίστε να βάζετε τα ντόνατς.
